Meal Prep For The Week

We had a great weekend and got out of the city for a beautiful hike! I was eager to get prepped for the week and finally relax. All day was us running around, rounding up ingredients, and getting errands DONE. It’s hard to keep things interesting when having such a strict diet. So we have been doing tons of research on recipes and starting a meal prep journal. Just so that we can refer back to our favorite meals. Here are some of our favorites! Hope you enjoy!

Main Courses

  • Fajita chicken
  • Grilled Honey Mustard Chicken
  • Chicken jalapeño Soup
  • Cauliflower “fried rice”
  • Turkey Chili

Sides

  • Sweet potato
  • Black Beans
  • Green Beans
  • Red Potatoes
  • Brown Rice

Snacks

  • Celery Sticks & Peanut Butter
  • Cucumber & Lime
  • Apples and Banana Yogurt & Granola Cups
  • Protein Bars

Side Prep

  • Breakfast Mix (Bell Pepper, Onion, Jalapeño, Tomato)
  • Salad Mix (Tomatoes, Bell Peppers, Red Onion)
  • Pico De Gallo
  • Salsa

Fajita Chicken

  • 1 Red Bell Pepper
  • 1 Yellow Bell Pepper
  • 1 Green Bell Peppers
  • 3/4  White Onion
  • 3 Cloves of Garlic
  • 2 lbs of Chicken

Seasoning

  • 2 Tsp Paprika
  • 2 Tsp Cumin
  • 2 Tablesoons Cayenne Pepper
  • 2 Tablespoons Black Pepper
  • 2 Tablespoons Flavor God Garlic Salt

Honey Mustard Chicken

  • 1/4 cup Mustard
  • 1/4 Honey
  • 3 Cloves of Garlic

Marinate for 2 hours at least.

G R I L L !

Chicken jalapeño Soup

I love this soup because it reminds me of my mom. She always makes it for me when I’m sick and I absolutely love it for comfort food. The spicy and the avocados really compliment each other.

  • 1 whole onion diced (1/2 for garnish)
  • 5 jalapeños diced
  • 1 Bunch of cilantro finely diced (1/4 for garnish)
  • 2 Cloves of garlic
  • 2 Lbs of Chicken diced into small cubes
  • 2 Avocados (for garnish)
  • 1 cube of Chicken bouillon
  • 5 Limes

 

(YOU can cook bowtie noodles separately or white rice to add to your personal bowl. Since I am meal prepping I am opting out the noodles.)

Begin by bringing water to a rolling boil. Add Chicken after you have thoroughly rinsed it, twice. Take white foam out before you add garlic, onion, and peppers. Let all the flavors come together and then add cilantro.

Pour yourself a bowl, add fresh onion, cilantro, avocado, lime, and ENJOY!

Cauliflower Fried Rice

  • 1 Head of Cauliflower diced
  • 1/4 lb of green beans into 1/3
  • 2 carrots diced
  • 1/2 Onion diced
  • 2 Cloves of Garlic diced
  • 1 Tablespoon of Coconut oil
  • 1 Tablespoon of Flavor God Garlic Salt

Bring all ingredients together in a pan. Saute with oil and seasoning until carrots are soft.

Turkey Chili

  • 1 Red Onion diced
  • 3 Tomatoes Diced
  • 2 jalapeño Diced
  • 1 Cup Black Beans
  • 1 Cup Pinto Beans
  • 1 Cup Kidney Beans
  • 1/2 Can of Tomato paste (if you like it thicker)
  • 2 Lbs of Turkey

Cook Turkey and Onion and Garlic all together and in a separate pot bring the rest of your ingredients together to a boil. Add as much water as you like.

Chili Seasoning

  • 3 tablespoons Chili Powder
  • 1 1/2 teaspoons Ground Cumin
  • 1/2 teaspoon Flavor God garlic seasoning
  • 1/2  teaspoons Black Pepper

*Also I use my ‘Main Courses’ as a base for my salad that I eat at every meal with lime. No dressings. (Besides the soups obviously. lol)

  1. The cauliflower fried rice sounds interesting. I know there are a lot of things you can do with it but, I have yet to try. I like it and would love to try something different with it.
